My Weekly Meal Prep!

Hey everyone! Hope everyone is having a great week. I told everyone yesterday that I would tell you how I meal prep for the week. I usually make my menus on Friday then shop on Saturday. Sunday afternoon is when I cook. I cook our breakfast, lunch, and snacks for the week. The dinner I usually have simple meals or crockpot meals. This is what my husband and my meal prep looks like. (the only thing that is missing is our dinner and our Shakeology.)

The meat I cooked was chicken breast and ground meat patties. I seasoned the meat with garlic powder and lemon pepper. I then cooked them on a grill. Next, I cooked sweet potatoes. I sprayed the pan with coconut oil. I love this coconut oil because it uses a bag system so that means no propellant used to get the oil out of the can.
I washed the potatoes, then cut them into cubes and placed them in the pan. I sprayed a little coconut oil on them. I also seasoned them with lemon pepper and garlic powder.

I then put them in a preheated oven. (350 degrees) Cook until tender.

Next, I cooked my squash. I cooked the yellow and the zucchini the same way. I used a mandolin to cut them up. put a little olive oil in the bottom of a pan with a couple of cloves garlic chopped up.
Then just cook until tender.

I then cooked the cauliflower and broccoli. I just cut it up and steamed it. Then seasoned it with lemon pepper and garlic powder.

Sorry, I only took pics of the cauliflower. The breakfast I made my husband was just bacon and Eggs with spinach. Yeah, it is that easy! Crazy huh?? I then portioned it up and put it in containers for our meals. So, there you have it! That is how I prepare our meals every week. Till next time! Hope everyone has a great rest of the week.

Homemade Beef Stock! Oh My!!

Ok, if you have looked at my blog you know I love to can. I found these at Kroger's the other day. I was so excited! I could finally make beef stock!

What I did was put the shank in the oven on a cookie sheet at 350 degrees until it was brown. I rinsed the bones off and put them in the crockpot. When the shank was brown I added it to the crockpot.

I then  put in some scraps of onions peals, celery and carrots that I had froze for stock. I poured about 1/4 cup of Apple Cider Vinegar on the bones and shank and let it sit for about an hour.


 Then, I filled the crockpot up with water and put it on low and cooked it for 24 hours. Then you just strain it and the liquid left is your beef stock. You can freeze it. I am going to can mine. Autism Awareness Day!

Today everyone wore blue for Autism Awareness Day! This day is very dear to my heart. I have a nephew, cousin, and some loved ones who are autistic. I hope you wore blue to show your support!

My class had a field trip where we hunted Easter eggs and had our party! They had a blast! I did not forget my Shakeology this morning. The pollen has my sinus acting up so I am going to do another shake this evening! Got to get those superfoods in! Can't afford to get sick! I will be canning some next week. I will be posting some howto's for this! I hope everyone has a blessed Friday! Till next time!
